Hazelnut Chocolate Snowballs

Here is a delicious and easy recipe. The richness of the hazelnuts alongside the decadent raw chocolate will surely get anyone excited about Raw.

Yield 15-20 cookies

1/2 cup dried, unsweetened coconut flakes
1 cup hazelnuts
2 tablespoons raw chocolate powder
pinch Himalayan crystal salt
3/4 teaspoon hazelnut extract
8 dates, pitted
1/2 cup raisins

Process a 1/4 cup of the coconut (reserving the other 1/4 cup for rolling the cookies in) along with the hazelnuts, chocolate and salt in a food processor, fitted with the “S” blade, until coarsely ground. Add the hazelnut extract, dates, and raisins. Process until it is a texture, which holds together when gently pressed between your fingers. Roll into balls and then roll in the coconut. These freeze wonderfully.

Variation
~ Use raw carob instead of raw chocolate
~ Replace 4 of the dates with 1/4 cup dried cherries

One of my fave SAD treats used to be the Rocher's chocolate, you know, with the hazelnut in the middle. Mmmmmm I'm hoping these are reminiscent of them.

Has anyone tried hazelnut extract? I don't think I recall ever seeing it at the store.

I don't recall ever seeing hazelnut either, Carmi. Maybe have to order it online or change to maybe almond. Like an almond roca?

Hi Carmi and Pansy *waving*

I have Organic Hazelnut Extract which I got when I was in Singapore. I am sure you can find them there. Here is an image of it. You might want to visit flavorganics.com for this item.

Also I used it in Blackforest CheeseCake where it calls for coffee extract but since i cannot that hence I used this instead and I do not recall having the taste at all. Perhaps I used just a teeny bit or perhaps the BFCC taste was overpowering for the subtle taste of this extract.

This looks good - question - would it be recommended that I soak the dates and raisins for easy processing??

I don't think I would want to soak these as it might make things to mushy...just my opinion!
