Tomato Rawvioli

Yet another gem of a recipe! Super easy to make, elegant and delicious.

Tomato Rawvioli

For this recipe, you'll need:
Tomatoes of choice (roma or other), sliced about 1/4" thick
Creamy Spinach Spread*

Creamy Spinach Spread
1 cups raw cashews, soaked for at least 1 hour
cup pure water
1 garlic clove, minced (or to taste)
1 tsp salt (or to taste)
1 Tbsp Lemon juice

3 cups of spinach (we like it with lots of spinach but you could use less if you want)

Blend the first set of ingredients in your food processor or high-speed blender. Transfer to a bowl and set aside.

Then, in a (clean) food processor, pulse chop the spinach until finely minced. (You don't want a green mush though!)

Gently fold the spinach into the cream cheese by hand.

*Alternatively, you could use Anna/MaRaw delicious Herbed Cheese Spread, posted here.


Assembly
Put a heaping teaspoon of spinach cheese filling between 2 tomato slices.

Dehydrate overnight at about 110 degrees. (I had a batch of tomato slices dehydrating already, so I just took a few out, loaded them up with cheese, then popped then back in the D for a few hours. Worked perfectly!)

carm the tomato dishes , pizza - pasta , are one of the cooked i really miss .
and you may have seen me throw this idea out before at alissas but if havent i thought ide try again because a raw chef like you could create a possibly great dish from this base idea =

take a grain like soft or hard wheat , then soak it in a seasoned water in order to give the raw grain a pizza or pasta taste . maybe ya soak in plain water 12 hours , drain then soak in the seasoned water say 8 hours to avoid bacteria growth . and in the water its like tomato - garlic - onion - basil - green pepper - etc . when its done , drain off water , the dish would taste like cold pasta or pizza . if you could make a soaked grain that taste like cold pizza but raw vegan youve built a better mouse trap

I made these with Anna/Maraw's Herb Cheese filling and they are just delicious !! Serve them on spiral zucchini sgetti and alfredo sauce ! Joz

wow!! another one on the to-do-list!! what am I to-do??!! I have only 2 arms and they are only good for huggings!!

but yes yes this is a sure to make for it looks super good.... mmmmm

Question Cashew substitute?

Hi!

What nuts/seeds could you use for this besides cashews?

Macadamia or sunflower???

Hey Avocadess,

I'm allergic to cashews so I always sub at least part of them with macadamias. Their texture is really creamy and virtually identical to cashews. Sunflowers might also work in this particular recipe, but the taste/texture would be quite different, in my opinion.

I found that in the 'herb' cheese use 1/2 nuts and 1/2 pumpkin seeds could not notice the difference the herbs comouflaged the nut/seed taste.
This came in handy for my 90 RawViolis I made for Pot Luck ! Joz
