Here's what we had the last couple of days for supper:
- Chef Dan's Cannellonis (look better than they tasted!)
- Erica's famous Fajitas, submitted to the Recipe Contest. The sour cream didn't turn out as well this time, somehow... I couldn't find any Taco Seasonings so I came up with a mixture of my own. Yummers!

Okay I have to join in the fun. All the food pictures are good-looking!
This is what I had for dinner tonight. My very all-time favourite snack! Truly simple! Truly nutritious! Its simply young coconut meat mixed in with dulse flakes and flax seeds. I added the flax seeds for crunch because I love nuts so this is one way to reduce my nuts intake this dish came about when all I had at home were these 3 things this is for you Carmella, since you love seaveggies too, try this you will love it.
.... and oh, followed by the MahaSanook!! The MANgo next to my simple meal!! This is in season and it is truly delicious!! No fibers just smooth creamy sweet meat. And the name... Maha - means Great and Sanook - Fun.... yes indeed, it was Great Fun devouring it!!
You see portabella mushrooms with (bottom) pesto stuffing and (top) red bell pepper sauce by Chef Russell. On the side is zucchini pasta with the same red bell sauce topped with avocadoes and alfalfa sprouts along with some tomatoes. Sorry I had some bites first then I remembered to snap some shots
Hi Carmella, yes the coconut meat was sliced into noodles. These were truly young, underage ones but you can use any form of coconut meat if you like but not too mature ones.

Okay, after having gone several days of not having proper foods on a plate so I took sweet 'revenge' and created a platter
Salad with pasta (could not decide between zucchini or carrots so I had both ) served with my tomato sauce with avocadoes and mushrooms on the sides.... I love this!!
Thought I'd share the lovely birthday meal I had yesterday...
It was just PERFECT!!! Simple and delicious; just the way I like 'em!
- Maraw's wonderful Carrot Soup
- Marinated Curried Kale Salad
- Portobello Caps With Tomato Mayo and Guac
And a very special dessert treat indeed: Don had brought back two lovely desserts from Chantale's new raw restaurant in town: Chocolate Mousse Torte and Strawberry Shortcake.
The Shortcake suffered a little on its way here so doesn't look so good, but it was quite nice. My favorite was the Choc Mousse, though. Yum! Yum! We served these with juicy strawberries and cherries. Summertime Bliss!
-spinach masala recipe on the forum - but i did it heathy style - didnt use the mango,raisins, or onion, but instead used diced tomatoes, zucchini, and parsley along with the spinach and the sauce...topped w hemp seeds.
-veggie lettuce wraps...
had some leftovers from the soft veggie wraps. added parsley, kalamata olives, tomato, sundried tomatoes, and mushrooms - blended and voila...for a quick pull together which was dinner tonite
