As is often the case, Heathy and I happened to be on the same wave lenght this week as we both whipped up some cannellonis. If you haven't already checked out the account of her latest dinner party, you can do so

Cannelloni Noodles
Peeled zucchini, sliced thinly with a mandoline
Filling
You can totally go crazy on this one. While Heathy opted for a cheddar and broccoli filling, I made the following two variations:
Creamy Pesto & Mushrooms
I mixed 1 part basil pesto with 2 parts Cream Sauce (recipe below) and folded in some chopped mushrooms marinated in a little oil, tamari and lemon.
Sauce
1 cup cashews and/or macadamias
1/3 - 1/2 cup water (until desired thickness)
1 garlic clove
1 tbs lemon juice
1 tsp salt
Grind nuts until fine then add other ingredients and blend until smooth.
Spinach & Cheddar
I folded some spinach chiffonade into
Rich Cheddar Sauce
Assembly
Slightly overlap 3 or 4 slices of zucchini. Put a few tablespoons of your favorite filling at one end and roll up. Top with a nice thick tomato sauce and some
parmesan for a special touch and voila!
Yet another great, simple and satisfying pasta dish. The real wonder is that I don't make these more often. Ah well... Too many new recipes to try I guess!
