Blueberry Cardamom Ice Cream

Blueberry Cardamom Ice Cream

If nothing else, try this one - you will be amazed!

2 cups macadamia nuts
1 1/4 cup almond milk
1 cup blueberries
1/2 cup agave
1/3 cup melted coconut butter
1 tbs + 1 tsp cardamom
1 tsp pure vanilla extract
1/4 tsp sea salt

Blend all ingredients until completely smooth and creamy. Chill and then process through an ice cream maker. Freeze.

If you do not have an ice cream maker: freeze in a bowl and stir every 30 minutes, OR freeze in an ice cube tray until solid and then process through a champion or high speed blender.

Carmella's Notes:
I made this and Heathy was right! It is incredible; unlike anything I ever tasted (thanks to the cardamom in there!)

First pic is from Heathy's blog, the second is of the ice cream when I popped it out of the ice tray and third after I blended it in the Vitamix for a few seconds.

Does it turn creamy as it warms up like regular ice or rice-cream?
I like it creamy and not too cold.

The texture is just like real ice cream, especially if you're using an ice cream maker. In my case, as I don't have one (guess what I'm asking Santa next Xmas!?! ), I poured the mixture in ice cube trays then blended it in the Vitamix for a few seconds. The result was slightly softer than with the ice cream maker, but every bit as yummylicous!

Oh my gosh this is good! I added a little twist by adding fresh lemon juice which made it even more incredible. So pretty too! Thanks Heathy!

Mmmmm

I made this about a month back for my non-raw family and they were AMAZED, to say the least. Tasted so very delicious!!!!!!!

Cardamom. Cardamom. I can't recall if I have that in the pantry. Such a hot weekend here. And frozen blueberries in teh freezer. Ice cream would be loverly.

And it's churning now in the ice cream maker. Perfect day for it. It's hot, breezy and sunny outside. It will be perfect for evening dessert while we sit outside near the pond...

Wow, a very interesting flavor! It tastes like PURPLE! I am so glad I broke out my ice cream machine and cleaned off the dust. I think more ice cream next weekend!

I find that watching the sales at my local HFS and getting the best dealz into the freezer is what I have to do. On-line shopping is supposed to be cheaper but for these items NOT. I am planning to do this recipe tonight but will have to substitute some Brazil nuts as I don't have the full amount of macademias. Hope it works.
