Thumbs up Chia is the new tofu!

I was thinking how versatile and virtually tasteless chia seeds are and how it compares to tofu. For a creamier texture, mix with cashews, for just thickening, use by themselves. Chia seeds can be used in either sweet dishes or salty (savory/spicy/herb flavored) dishes.

They ARE amazing little bladders of water and givers of life!

Matthew Kenney has a unTofu recipe .... we are going to play with to make Eggs Benedict when Carmi is here......
