Hello there! I personally dont have a profile but use my husbands to search for recipes and thought I should contribute one of my recently favorite ones. for a while I felt disgusted about eating mushrooms for no reason but I've been feeling like taking them back into my diet once again, coming from south america one is to miss a lot of yummy food. Hope you enjoy this recipe from my neighbor country as much as I do!
Peruvian Mushroom Ceviche (Ceviche de Champiñones)
8 white button mushrooms cut into squares
1 small white onion cut into julianne
1 1/2 tablespoons of finely chopped cilantro (or more if you love it)
1 tablespoon of finely chopped parsley (optional)
2 cloves of garlic crushed
1 teaspoon of ginger (optional)
1 limo chilli pepper or 1 jalapeño or any hot pepper available (if you dont enjoy hot foods try adding half a red bell pepper or even better a sweet pepper)
Juice of 6-8 limes
2 tablespoons of olive oil (optional)
salt and pepper to taste
You can also add mango chunks!!!
this will give you enough for 3 people but if you are like me its all enough for myself
its nice to add something sweet to it as the original recipe asks for a boiled sweet potato, if you dont mind having it cooked I highly recommended. other wise you can add a few raisins.
