Did I ruin my almonds by soaking them too long?

I soaked my almonds for about 24 hours but did not change the water, when I went to drain and rinse them today the water was gray and smelled pretty bad. Did I do something wrong or will they be alright to use? Thanks in advance

I would guess that it depends on the almonds, the temperature etc. Might be safer to throw them out, but if it was a lot of them and you're tight for money, maybe rinse thoroughly and taste one!

If you have some food-grade hydrogen peroxide, or some grapefruit seed extract, or even some lemon juice, you could rinse them first like crazy, then put them in some water with one of these additives in it and let them soak for about 20 minutes. Don't forget them! LOL.....

Hopefully you won't forget them next time!

Thanks Mary, I was wondering if you are supposed to change the water at all when you soak almonds, or if the original water is sufficient for a good soaking?

I would change the water at least every 12 hours....

Further: I think adding some salt while soaking is beneficial to the end-result, maybe others with longer experience can confirm this...?

Adding salt while soaking is doing 2 things:

- Taking out more anti-nutrients;

- Prohibiting the growing of bacteria, which like a wet environment

I have a chart inside one of my kitchen cupboard doors for soaking nuts and seeds: it says almonds germinate at 8 - 12 hours and sprout at 12 hours.

I just generally soak before I go to bed, then rinse in the a.m. and drain. I then rinse them a couple times during the day (like you'd do for sprouts) for oh, maybe half a day, then put in the D.
