This sweet n sour sauce is super yummy! I first made it to go with the "fried" zucchini and fish sticks, but found that it was great spread on nori along with avo and greens, as a dip for my garden peas, etc etc...
Im not sure who to give the credit to, since im not sure where i got the recipe. Had it a long time before actually making it, and so glad i finally did!
2 large tomatoes (about 2 cups chopped)
1 cup rehydrated sundried tomatoes
1 clove garlic
1" piece ginger (i think i used a bit more)
1/4 cup apple cider vinegar
1/2 cup dates or honey
1 tbs olive oil
1 tsp sea salt
Blend all together until creamy and smooth.
