Creamy Tomato Soup
This was really nice with some crackers or corn bread. It tasted very raw and fresh like summer so I added some sundried tomatoes to it to make more like campbells and winter. If that makes any sense. I also added a wedge of onion and sprinkled it with some smokey walnut crumbles.
A nice comfort meal...

just made a variation of this...didn't have avo or red peppers so i added extra tomato and some celery. i will add sweetner next time, a bit it was definitely yum. i am going to dry lots and lots of toms for the winter as tomato soup is a favorite of mine (i usually resort to canned in winter, which works okay too, but i think dried will be better) and i have a feeling dried will take the acid off...?probably?

In my experience, all tomato soups need sweetener, except when you're lucky enough to use sun ripened field tomatoes (NOT those from the greenhouse). Those are the best for drying as well.

Glad this came up, I have a ton of fresh SC tomatoes and am a little tired of Gazpatcho! (not really, could never be...but ready for a change!)

How many tomatoes and bell peppers do you think make up a cup?
Basically, I'm lazy and want to do as little as possible before tossing it in my blender. At least I'm honest right?

Wow, I just made this (didn't have avocado) and it does taste just like Campbell Cream of Tomato Soup!!!!!!!! Of course I am using tomatoes from a friends garden. Mmm good. I don't love the taste of red pepper but the tomato flavor overpowers it here. Woohoo.

MMMmm I just made this for lunch. It's so hot here, but I am pregnant and craving soup and this sounded so good.
I stuck to the original base, then added some garlic and onion powder in. That tasted really good and I decided to throw in the other quarter of the avocado in to make 1/2 an avocado all together. THEN I decided I wanted it spicy so I added in about a jalapeno's worth of sliced fermented jalapenos (I ferment my own!) and some red pepper flakes. I had half a zucchini left from another recipe, so I diced that, along with the other avocado half and mixed it in at the end, because I like chunky soup! Heated it up in the D for a few hours.....mmmmmmmmm, it turned out so delicious.

Awesome soup !
Carmella,
Wow..another Great soup recipe. I actually changed mine to a
red curry tomato soup. I love spicy Thai food ! Made the following changes:
Used 1/2 avo, no nuts
Pinch or more of red curry paste
Pinch or more of cayenne ..love my food spicy
1/2 lemon juice instead of lime
Dash of tamari
Garnished with chopped cukes. the soup was so great tasting that even my husband loved it.
Just wanted to share this option.
Enjoy....
