Pasta Primavera
So simple and really yummy!
Wide zucchini noodles (just used the veg peeler)
fresh garden peas
chopped red pepper
small chopped carrot
baby tomatoes, halved
fresh shredded basil
fresh chopped parsley
lemon zest
and then i tossed in Carmella's House Dressing. Was gonna do a light cream sauce, but it was way faster to finish up the dressing since i had it.
I found this to have a really fresh flavour, and the noodles seemed to sorta melt into the sauce.
Id li ke to add marinated mushrooms and asparagus too, next time!

Oh yum girl! I love how you can change the type of 'pasta' and it seems to change the taste as well. Or maybe it's just me!?!
Bet that would be really yummy with snowdrop's ranch dressing as well! Mmmmm

We had that for supper tonite! Wasn't planning on making it so soon but we felt like something light (after sampling a little of all the yummy goodies freshly out of the D today! )
We didn't have fresh sweet peas so I used frozen ( ), and I added a little thinly sliced green onion in there. I tossed the noodles and veggies with snowdrop's ranch dressing.
Soooooooo good!

Beautiful picture!
I could use my brand of Spicy Garlic Sauce for that dish. Here is the recipe:
Spicy Garlic Sauce
1/2 cup soaked cashews
1/4 cup finely chopped red bell pepper
1 teaspoon finely chopped Jalapeno pepper
3 cloves garlic, minced
1/2 teaspoon cumin
1/4 teaspoon dried thyme
1 tablespoon dried parsley
1/2 teaspoon Celtic Sea Salt (or to taste)
1/4 cup water or more (depending on how creamy you want)
Process cashews in food processor until creamy. Add water if needed. Then put the rest of ingredients and blend away!

Oh My WORD!!!
This was Goood, made it with;
asparagus (my first time raw, loved it!)
red pepper
marinated chantrelle's (thanks to Joz )
spiralized zucchini (I suck at that )
mandolin shaved carrots
Topped with Snowdrop's Ranch dressing/dip
I am not a big veggie eater but really enjoyed this!
