Zucchini Dillfredo

I made this for dinner, it is really good and thought I would share the recipe!


Zucchini Dillfredo


2- Zucchinis (not peeled, just cut off the ends)
Use grater attachment in FP to make grated zucchini (set aside in bowl)

Sauce:
2 Tbs. Tahini
2 Tbs. Almond Butter
Lemon (juiced)
1 garlic clove
1 Tbs. Dill (fresh)
1/8 Cup olive oil (add last while FP is running)
Process in FP with the S blade, add olive oil while FP running to make a thinner sauce. Pour over the zucchini & add the sunflower seeds.

• Optional Mix in 1 Tbs. raw sunflower seeds after mixed in bowl.

That looks Yummmmmmmo! Got zucchini a plenty. Does anyone put a 'dash' of nutmeg in their alfredo sauce as the "Italian's " do? My neighbor told me that you can not have alfredo without it! Joz

Thanks Ocean! This looks so simple and so good! Someone just gave us a humongous zucchini so this will be perfect!

I made this the other day and it was really delish. Not to mention super quick to make too. I ended up putting less oil and adding water until I reached the right consistency. Worked great!

We just ate the last of it tonite. I transformed it into tartar sauce by adding a little more lemon juice and chopped up Bubbies pickles. Yummo!

PS. The third pic is after mixing the sauce in. Looked so much like the SAD version!
