Wilted Kale Salad with a Creamy Chipotle Dressing

If this kick ass kale salad doesn’t get you to love your greens, I don’t know what will. Russell James is a raw chef in England with amazing eye candy recipes. He did a chef’s residency at The Plant in Dumbo, NY where he made this dish daily for the staff and they simply couldn’t get enough of the creamy smoke flavor.

Here is the Recipe:

Wilted Kale Salad with a Creamy Chipotle Dressing

Serves 4-6

For the wilted kale
4 heads kale (this will seem like a lot but will wilt down when the salt is added)
2T salt
2c baby tomatoes, sliced
1c hulled hemp seeds

For the dressing
3 avocados
2 chipotle peppers*
½c olive oil
2T agave
¼c lemon juice

*If not using chipotle peppers, substitute with onion powder, cumin, chili powder, garlic powder and tamari/nama shoyu

* Remove the stems and then wash and cut the kale into small pieces. Place into a bowl, add salt and start to massage the kale until it wilts and takes on a cooked texture.

* Add the tomatoes and hemp seeds to the bowl and mix in by hand.

* Blend all ingredients in a high-speed blender until creamy and mix into kale by hand.

Carmella's Note: Also very good with a little tahini in there too! Yummo!

My printer is getting alot of use! Recipes look great, anything to make those greens taste a little better.

I so made this for Dinner tonight for the boys, as I only eat fruit these days. Both of them ate it all. David ate the most naturally. He wanted to take some for lunch tomorrow, so I will make more soon as he already ate tomorrow's lunch. LOL

I alterd the dressing with a little Cayanne

I finally made this the other day & it is fantastic. I am going to be making it again today & I think I will rinse the salt off after wilting the kale as it was a bit salty.

I added just a drop of liquid smoke & it gave a great flavor. Here's a pic. I have to say this is the best kale dish I've ever tried!

Thumbs up Simple AND Tasty!

this was so simple to make. Wish i had the chipotle peppers, but what can you do? I am impressed! I also had a bit of scrumptious onion bread whilest chomping at the salad, and before i knew it, I had eaten an ENTIRE HEAD OF KALE (I cut the recipe down as there is only one of me)

Mine was not as wilted, and my dressing looks green. not white. I agree about tahini being a good compliment to the dressing

tip: add the salt carefully, it will continue wilting while you prepare the dressing and tomatoes, you can always add more but you can't take away!

Wait a sec, does the kale n tomatoes go in the blender too or just the dressing ingredients?

Thanks for bumping this up as I finally got a hold of chipotle and didn't know what to do with them.

I just blended the dressing, but mine didn't look as creamy as the other pics

Oh, yea, this is definitely good. I made it as is except I added a nice big green onion. I also think I will blend in the hemp seeds with a fork next time as all the little bits stuck to my hands so I was forced to lick them all off as I was NOT going to rinse all those lovely hemp seeds down the drain!

I tried taking a picture but the harsh lighting in my kitchen is terrible. I need the daylight to take a pic. Tomorrow, I will try drizzling the tahini on top like in the photo. I think pine nuts would look and taste great in there also if hemp seeds are not on hand.

I've just been able to get a hold of organic kale and guess what??? I'm having this for dinner tonight for sure! Who knew you could get this excited about greens?
I can almost taste it now... and it's 10:20 am!

So I forgot my kale salad to eat before the hockey game. I was sooo craving it. Everyone was eating the typical hockey game crap they sell, and all I could think about was my kale salad. So weird. I got home kinda late and broke open my kale chipotle salad and ate right out of the bowl and was sooo satisfied.

I don't think I have ever had a late night munch session with kale or kale cravings. I may be addicted to this. Which would be a good thing I guess.

This is seriously one of the best tasting salads I've ever put in my mouth! I used hemp oil instead of olive oil and used the other spices suggested for use instead of chipotle. Wow this is a great recipe!
