this is my most fav!!!!!! delicious ! posted on RFT:
Corn Chowder
by Joz
2 1/2 C ALMOND MILK
2 C fresh corn
1 clove garlic crushed
1 each soaked sun dried tomato (small handful)
Blend Well above ingredients.
Add:
dash sesame oil
dash soy sauce
1/2 t chili pepper
1/2 t cumin
*** can add 1/2 jalapeño diced if you want it spicier
Top with:
sliced sweet onion
mushrooms sliced
red pepper thinly sliced
yellow squash thinly sliced
zucchini thinly sliced
top with finely chopped parsley
ADJUST SEASONINGS TO YOUR TASTE

There must be something about corn chowder with mushies and red peppers as they often seem to contain them.

Just one single 'chunky' round sun dried tomato! *well the ones I got are 'chunky' ! and it was enough to add flavor not make it tomatoey: Yummmmmmers !

Joz, this was soooooo good and so darn pretty, I just couldn't stop taking pics!
I put a handful of sundried toms as mine were pretty thin. Didn't make it very spicy as we didn't have jalapeno, but I can see how it would be really yum.
Don suggested that it would be super nice too with some loose corn in there, added at the end.
I can see now why it's your fav! You've got a winner, girl!

Corn on top for decoration would do a trick;
but Carmella, I'm done - I EAT - you'r taking pictures - admiring it - trying to make it preatier !!!!!! LOL

Mmmmmmm... I had forgotten about this recipe. So many yummy new ones that keep coming along...  will definitely be making this gem again when fresh corn is available.

My sister called me and told me she ate the most delicious soup! She had 2 bowls and today she's making another recipe! No it was not my recipe; she said I never sent her my 'famous' recipe!
I asked her to send me this recipe! She said I sent it to her.......hehehe I don't remember it. But here it is!!! I made it today, after all, I have to try other recipes, that's 'da' rule?
I do not know where this recipe comes from! Sorry, I salute you whoever you are; And give you credit! It's delicious! well completely different from my corn chowder, and it's nut free !!!
fresh corn gazpacho
1 1/2 lbs tomatoes (i used roma and orange heirlooms)
5 green onions
1/2 c apple cider vinegar ***NOTE; USE LESS LESS THEN ADD IF YOU NEED TO! Joz
1/3 c extra virgin olive oil
1 bell pepper (any color)
1 clove of garlic
1 tsp dill
3 tbsp lemon juice
2 ears corn *****I DID NOT CHANGE ANYTHING IN THE RECIPE !!! AND IT'S DELISH! Joz
blend all ingredients–except one ear of corn–in the blender until well blended. then stir in the remained corn, unblended.
it’s tasty when topped with avocado, thinly sliced squash, shredded carrot or more raw corn. i sprinkled some dill and a dash of cayenne for flavor.

We just got more corn today and we have some tomatoes left from Mosaica's garden so will be making this tomorrow!!! Yippee ya yay!
