Arrow Ginger Almond Nori Rolls by Ani Phyo

Ginger Almond Nori Rolls
By Ani Phyo, posted on her blog

Enjoy another fast and easy vegan and vegetarian recipe that supports both a gluten free diet and raw food diet. Sea veggies are a great source of potassium, chlorophyll, and minerals from the ocean. And nori is a yummy sea veggie. Btw, I’m wearing my favorite WESC dress!

Ginger Almond Pate

1 Tablespoon ginger
1 clove garlic
1/2 teaspoon sea salt
1 cup almonds, dry
1 lemon’s juice
1/4 cup filtered water

Nori Rolls

2 sheets nori
1 batch Ginger Almond Pate
2 cups spinach
1/2 carrot, cut lengthwise
1 cup mung bean sprouts

Oh wow! Looks great!!! We're such huge ginger fans!

Dang, I didnt get mung sprouts though... Ahh! But I did get sunflower sprouts and have tons of alfalfa. Yay!

Thanks for posting this, mama. Simple sounds like just the thing as I'm coming out of the cleanse.

These were delish! I find that sushi often needs some kind of dippling sauce for flavor but not these rolls! The ginger and garlic in the pate did the trick.

As a rule, I always prefer soaking my nuts and seeds for easier digestion so next time I might try soaking the almond first and see if it affects the taste.

Also, as we don't have high speed internet, I wasn't able to watch the video to see how Ani makes the pate so I dumped everything in the food processor at once. I think it might have worked better to grind the almonds first, and then add the rest.

I didn't have mung sprouts so used sunflower sprouts and alfalfa instead.

Yummy!
