It's very cool to see something I came up with here... but I'm honestly not sure yet if it's... well.. good! For the record ... when it comes to food, I welcome feedback and help so it tastes as good as the pics.

Tracy: Your Enchiladas!

Tracy,
These look so darn good! The wrap seems almost flaky; you'd think it's cooked!

I have yet to try my hand at making enchiladas and would love to know which recipe you used. Is it Alissa's or a different one?

Hi Carmella,

Yes, that is Alissa's recipe. I love the wrap. I often do different things with the fillling. You know the cheese sauce that you have on your blog that is from Serene Alison? That one is incredible in there with veggies and whatever. It would be good too with some of the taco meat in too.

Isn't it fun to play with your food?

Man, there are so many recipes I have yet to try in Alissa's book! I'll have to make this one for sure, esp now that corn is in season. Oh yum, I bet it would be great with the cheddar and salsa meat. *drooling*

I could spend all day my kitchen making different raw things. It is so much fun.

Yeah Tracy, i have to agree - yours turned out sooo well!

i have fresh corn, so i guess its the perfect opportunity to make as soon as i have the chance. woo hoo! and YES yes yes, making raw things is soo much fun!

man oh man, i really wish we could all get together for a big raw food shin-dig! hehe

I love the wrap for the enchiladas but I do believe the filling could use some work. It is tasty but kind of bland. Don't get me wrong, I like it that way but it doesn't remind me of enchiladas.

So I would suggest that you use the wrap and invent something that you will LOVE for the filling.

That cake looks fabulous! What a lovely presentation! Bet everyone was impressed!

You said you made a few mods. Did you use the mac butter and the lecithin? I don't have either of those...

Carmella, I didn't have mac butter either. So what I did was substitute blended cashews for 1/2 the young coconut and then used 1/2 as much almond butter in place of the mac butter - (used the cashews and almond butter to try to get the mac butter texture/taste). I blended the cashews with coconut water in order to try to have the coconut taste that I would have had with all young coconut meat. I used half as much raw cacao powder as the recipe suggested because we don't like real strong chocolate. Also, I was out of agave so I used Really Raw honey and I left out the lecithin. With all of these modifications, it was still wonderful and yes, our guests were impressed. It was fun. I also froze it for about four hours and then took it out and put it in the fridge for about an hour or hour and a half before serving. The texture was perfect.

We went to a wedding today and looking at the SAD wedding cake and slushy ice-cream punch was tempting. Then I remembered that I had left-over chocolate mousse cake at home and the temptation was gone. I knew my raw mousse would taste much better than SAD cake and there would be no guilt!
