Chocolate Mint Candies
1 c. coconut oil
1/2 c. raw cashew butter or almond butter
1/3 c. agave
1/8 c. raw carob powder
1/2 c. cacao nibs or carob powder
10 drops peppermint essential oil or peppermint flavoring
Place all ingredients in a high speed blender and blend until smooth. Pour into molds or a pan; freeze for at least 30 minutres before serving.
You do want to oil the molds to make it easier to get the candy out.
I used all carob powder because I will not give my kids cacao. I also used almond butter.

Yet another one of those recipes that I thought was complicated but is in fact super simple. Yay!
Now I gotta get a hold of some molds...

Don't wait to make it. Instead of molds I have also used mini muffin tins. You could also just pour them into a pan or dish and then cut pieces. Seriously. They may not be as pretty but I wouldn't wait for molds.
They are that good.

Mini- muffin tins? Great idea! I do have a few of those around I think.
OK, now I gotta get myself some peppermint oil. lol
Have you ever tried making it with home made nut butter? I'm just wondering if it would work as well as the store-bought stuff is so pricey around here.

Yep, I never use store bought. I always use almond butter that I make myself. Works fine!

Let's hope my humble Rachael Ray fp can take it! lol If not, I guess the super duper Vitamix should be up for the task.

I would NOT try it in the FP. Use the Vitamix. You want it very smooth. Silky smooth.

I haven't but it would be good. Do what you like best and let us know how it turns out. As long as it tastes good with chocolate than you can do any flavor you would like.

I've been eyeing this recipe for ages! I kept thinking I needed to get proper candy molds, but somehow that never happened. I'll have to go shopping online at this place or this place sometime. Cool chocolate mold shapes galore! This was yet another delicious candy! One of Manu's favorites!
I used about half cacao and half carob, and poured the mixture in an oiled ice cube tray. Not as pretty as Tracy's, but it did the trick.
