Here's a lovely variation of my house dressing. Soooooo delicious!
Dill-icious Dressing
Makes 3 cups
1/2 avocado
1/2 cup olive oil
3/4 cup water (or until desired consistency is reached)
1/8 cup apple cider vinegar
1/4 cup lemon juice
2 or 3 garlic cloves
2 tablespoons tahini
1 tablespoon miso (or 2 tbs Braggs)
1 teaspoon salt, or to taste
1/4 cup fresh dill
Blend all ingredients except dill until smooth. Add dill and process briefly. Alternatively, you could finely chop the dill and add it by hand.
oh carmella, i know i can always rely on you to have posted a super yummy recipe for exactly the thing i want to make! so glad this site exists...it's like a little carmi-google! i just made this and it is amazing. i dipped some veggies in it to try it...can't wait to have it on my salad tomorrow.

I made this dressing yesterday and OMG!! Dill-icious is right. My whole family LOVED it and it even tasted better today, the dill flavor was much more pronounced.

Thanks for this recipe Carmella-made it yesterday to have with wraps. Really nice. I made it with fresh fennel and it tasted nice-mustn't have read the labels right-thought I was buying dill. Used to grow it but we have rain forecast ahead and have lost a lot of herbs with all the rain we have had already. I certainly notice the difference in my food bill.
