been toying with the idea of using fennel and pear together for a few days and wasn't sure how to go about it. Anyhoo, the pizzas were awesome! Woo-Hoo! (Recipe coming up!)

hey Aisah: me no like 'fennell' but will give this a try. I made apple, pear, fennell salad -- me no like fennell ! oh well. will you try the pizza with me? LOL
First of all, I would highly recommend giving marinated fennel a try. I think that the marinating process changes the taste a lot. The result is really very subtle tasting and seriously yum.
OK, about how I came up with it, that's a funny one actually. I just recently discovered fennel and wasn't sure what else it would go well with so I did a little research. The consensus seems to be that fennel and fruit is a winner. Having lots of pears around, I just had a hunch that the combination would work.
It took me a few days to figure out how to go about it. I was thinking a salad at first... But then I came upon a pear pizza somewhere and thought that's it! I ended up topping the crusts with basil pesto, lightly marinated Bosc pear and marinated fennel. I wanted to crumble something cheesy on top so was thinking along the lines of parmesan or feta. In the end, I came up with a lovely cheese made with macs, cashews and pine nuts.
Wasn't sure how it would turn out as this was totally new territory flavor-wise for me but it was awesome! The smell of it coming out of the D was divine. Mmmmmm
So there you have it!
Off to type up the recipe now.

cRAWker that was truly intelligent of you to come up with such combination. Though I did not like fennel when I first tasted it, so this combi what with Bosc pear at it, should be good. Ja, fennel taste was too strong for me liking but as you mentioned, marinating should probably mellow it down plus sweetness of the pear I can only imagine mmmmmmmm.....
JozzieDozzie - that is a GREAT idea. Its a deal!! We will find a 'fennel' day and we will 'eat' it together okay??
