Oh wow! Peaches was right; this is totally yummy!!! Man oh man, I could have eaten the whole thing myself! lol
I did half the recipe and did a few minor changes:
- I also had no cumin seeds so used powder
- I don't react well to onions so subbed with the white part of green onions
She calls for 1 small butternut squash which is pretty vague. I had a big one so used only 1/3 of it or so (roughly 2 1/4 cups).
I'm stoked I found such a delicious squash recipe. Yippee! Thanks so much for sharing Danny. (I'm soooooooo getting Ani's book thanks to you! lol
