Walnut cranberry squash "rice"

Sorry, I think I am posting in the wrong place again? I can't get my brain around the changes yet, I'll work on it

1 small butternut (aprox 1 lb) peeled, seeded and cubed 2"
1/2 small yellow onion (1/2 cup) chopped
1 T cumin seeds
1 T coriander powder
1/2c cilantro chopped
1 c dried cranberries
1 c walnuts crushed
2 t sea salt

Blend squash in FP until small and "rice" like, then put in a bowl, add all the rest and mix well, keeps for 2 days in the fridge

ps-I have not tried this yet, sorry no personal exp

Oh wow! I haven't used cranberries much in the past that looks really yum! Yay!

I made this tonight and it is YUMMMMMYYYYYYYY!!! Ya'll have got to try it! I didn't have cunim seeds, so I used powdered cumin and it worked just fine. Made a fine dinner and I will take some to work tomorrow for lunch.

Oh wow! Peaches was right; this is totally yummy!!! Man oh man, I could have eaten the whole thing myself! lol

I did half the recipe and did a few minor changes:

- I also had no cumin seeds so used powder
- I don't react well to onions so subbed with the white part of green onions

She calls for 1 small butternut squash which is pretty vague. I had a big one so used only 1/3 of it or so (roughly 2 1/4 cups).

I'm stoked I found such a delicious squash recipe. Yippee! Thanks so much for sharing Danny. (I'm soooooooo getting Ani's book thanks to you! lol )

Oh, and to top it all up, it's really pretty too. See for yourself...

You guys really gotta try this!!!

Got the squash, got cranberries !!!! way to go! ups; Sunday is a RAW I Screeeeeeeeeeeeem Pot Luck ! got to prepare for it. so next week for sure for sure trying this. Joz

This was the first recipe I tried when I got her book. I was so curious about raw butternut, I had to try it. I also used cumin powder and I drizzled in some virgin coconut oil.
And boy, the VCO really finished it so nicely and a nice way to get that VCO in. This was a hit with all the cooked and SAD people.

This squash recipe is a favorite at our house. funny thing, we've never actually used walnuts and cranberries in this recipe we always use almonds and raisins,and it still tastes fab! I usually use cumin powder too because I don't have the seeds on hand.

Has anyone tried Ani's mexican "rice"?
