Sausage Patties

OK after looking at the pancake recipe I wanted to make some sausage. It's made up, thrown together, and in the D. So we'll see how it turns out.

1 c walnuts, soaked and drained
1 c cashews, soaked and drained
6 dried roma tomato slices
1/2 c flax seed, ground
1/2 lg sweet onion
1 sweet apple
1 small handful each fresh oregano, sage, and thyme
garlic powder, pink salt, and cayenne to taste
1 rib celery

Everything went into the vitamix except the celery which I used to push the rest down. It got blended last. If it turns out I'll take a pic.

* After about 8 hrs on each side they tasted very much like the extruded slightly sweet sausage that is used on some SAD pizzas.

** For the 'pan fried' pattie taste I was looking for I put them in the FP and added:

1 c fresh ground flax seed
1/2 c pulsed sunflower seed
1 t dried red hot pepper
1 t garlic powder
1 1/2 t rubbed sage
1 t dried thyme
1 t chili powder
1 oz ACV
2 oz nama shoyu
2 oz EVOO

Voila, great base for sausage patties. These were still milder than I'd like. So will probably leave out the cashews and add more spices next time.

for me ide add crushed red pepper flakes .

Yes, that would be good in it. Didn't have any in the house. I'll have to get my daughter to string me some peppers. She collects hot pepper plants.

This sounds amazing! and surprisingly easy..BONUS! Thanks!

I always find that fennel seeds make things taste like the sausage I remember from the best pizza and breakfast places. When I was just vegan many moons ago, I found that fennel would make or break the soy sausage patties I made with the leftovers from soy milk night.

Update

Tasted the sausage earlier and did not like it at all, neither texture nor flavor. So out of the D it came and into the FP. I added:

1 c fresh ground flax seed
1/2 c pulsed sunflower seed
1 t dried red hot pepper
1 t garlic powder
1 1/2 t rubbed sage
1 t dried thyme
1 t chili powder
1 oz ACV
2 oz nama shoyu
2 oz EVOO

At that point it tasted good. Made patties again using the same measure I used last night and have less patties??????? Now, I didn't eat more than a teaspoon full while tasting it. They must be more dense????

Anyhow they are back in the D for the night.

These are very good mildly spicy sausage patties. Yay! It made 8 - 3 1/2" patties. They are very dense so I'll probably make smaller patties next time. Also I'll be making the next batch spicier for hubby.

One of the things hubby loved and had to stop eating was pancakes and sausage patties. The SAD version made him sick.

Now to make Anna's pancakes and some syrup. Think I'll make two syrups - medjool and apricot.
