RAWvolution's Un-Tatoes and Gravy

Un-Potatoes
From Matt Amsden's RAWvolution

2 1/2 c cauliflower
1/4 c macademias
1/4 c oil
1 tsp salt
1 clove garlic

Food process, season with fresh ground pepper to taste.


Gravy
From Matt Amsden's RAWvolution

1/3 c coconut water
1/3 c water
1 1/2 c chopped portabellos
1/4 c tahini
4 cloves garlic
2 T lemon juice
2 T soy sauce
1/2 stalk celery sliced
1/4 carrot sliced
1/4 c onion sliced
1/4 c red pepper sliced
1/2 - 1 tsp salt

Blend all ingredients

Mashed taters with gravy and loaf

I couldnt resist, with the recipe posted I just had to post a pic....Its Rawvolution's meatloaf, taters, and gravy - all really delish!!!

I made these a couple of days ago as I was recipe testing for the Holidays.

Altho I'm not a big fan of cauliflower, these tatoes were okay. We could definitely taste that bite that cauli tends to have and don't think they would keep well for another day.

The gravy was yummo. I'd recommend cutting down in the garlic department as I put half of what he called for and that was still too much for our taste buds. I ended up having to add more veggies to disguise the taste. Oh, and I used criminis and button mushies as I had no portobellos.

I served them with my own version of nut turkey/stuffing. (THE best we've tasted so far). See recipe here.
