The only way we like them is juiced - with tomato, celery, sweet peppers - Like a Raw Virgin Bloody Mary. Good Stuff
The possibilities are endless. Collard wraps and smoothies are our favorites.
Make a walnut pate and stuff or roll the collards up.
Stuff and roll nut cheese, vegetable sticks such as avocado, sweet or hot peppers, etc.. I can roll anything in a Collard leaf and my Little Man will eat it.
5 medium to large collard leaves
3 Tbs. lemon juice (about 1 lemon)
1/2 tsp. Himalayan salt crystals or Celtic sea salt
Prepare the collard leaves by cutting off the stems at the base of the leaf, then take a small paring knife and carefully cut the thick bump of stem off the back of the leaf making it flusher to the leaf. This is to make the leaf flatter and easier to roll.
I love turnip greens. They are one of my weaknesses.. but not easy to find, unfortunately.
I start by dipping them in either cashew or tahini dip.. whatever you would do with kale chips.
But I only dehydrate them for an hour and a half or 2 hours.. so that they are still moist..
(I do the same with kale.. I love it when it still retains some water content and is pliable)
Then I use them for wraps, because they are still soft.. Korean type wraps, not buritto type wraps... Just small morsells of goodness filled with whatever I have.. marinated mushrooms with grated carrots and or zucchini and some sprouts are my favorite..
