Winter pear and fig salad
Winter pear and fig salad
Makes 8 servings
8 cups torn radicchio, washed and dried
2 cups boston lettuce, washed and dried
4 bosc pears, cored and thinly sliced
8 dried figs, cut into eighths (fresh figs will do as well)
1 1/2 cups chopped walnuts
1/2 cup chopped fresh Italian parsley
sprinkling of nutritional yeast (optional)
Vinaigrette:
1/2 cup evoo
1/4 cup acv
salt and freshly ground black pepper
Make an attractive bed of lettuce leaves on salad plates or a large platter. Arrange the pear slices on the lettuce in fan shapes. Scatter the figs and "NY" over the pears.
To make the vinaigrette, place all ingredients in a jar and shake well to combine, just before serving, drizzle the vinaigrette over the salad.
