This was very yummy and EASY! A little too "garlicy" for me though (although that didn't stop me from eating it all! lol) I didn't have the spanish peanuts so I just used pine nuts. Will definitely make again.

We had it for dinner tonight too with a soy ginger noodle soup (cooked) I made for my husband and son. (I had leftover gazpacho) The salad was delicious! I didn't find it had strong enough flavor for me so I added some shoyu and sesame oil. Yummy!

Mmm, I had this for lunch today. And it was delish. I made it last night and almost ate the whole bowl right there!
I didn't have any spanish peanuts, so I just added finely shredded chinese cabbage and diced red onions.
I didn't have habanero so I used a chipotle instead and half sesame oil and olive.
Yum!! This will be a regular for me. I thought I would have enough to keep at work for tomorrow's lunch.
No. All of it in my tummy now.

Yummy. I am craving broccoli lately, and this was perfect as I had an overripe avocado. I whipped up a cream of zucchini soup to go on the side. The spicy kick is very complimentary -- been craving spices like jalapeņo too. Yes, I didn't use a habaņero (isn't that way too hot?!), I used a red chili pepper, like a jalapeņo but red.
