Banana Nut Pancakes
Banana Nut Pancakes

Makes roughly 12-15 pancakes
Ingredients:
1 C Brazil Nuts
1 C pecans
4 large bananas
1/2 C almond milk
1 date, pitted and soaked
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. sea salt
Cream:
1 1/2 C Cashews
1 1/4 - 1 1/2 C almond milk
3 orange segments
1/4 tsp. cinnamon
2 dates
1/4 C agave nectar
1/2 tsp. vanilla
pinch of sea salt
1 mint leaf (optional)
Preparation for Pancakes
Place all ingredients in a food processor and blend until very smooth. Pour onto teflex sheets into circle shapes and spread to about 1/4-3/8". Allow to dehydrate for about 9 hours @115 degrees. Flip onto mesh screen and dehydrate another 2-3 hours. Serve with cream or agave nectar.
Preparation for Cream
Place all ingredients in a high-powered blender and process until smooth and creamy. Pour over pancakes and enjoy!
Serve with cream or agave nectar.

I made these several times and they are Purely Delicious ! My sister in

I will as soon as I get all the ingredients. Actually, sounds like just the thing for when Jaimie will be visiting us next week. ;-) We haven't had 'brunch' in ages...

BIG QUESTION --
Can these pancakes be made firmer (less banana?) and can they be used as strawberry shortcake cake, possibly even lining a muffin pan?

Erica, have you made the pancakes? I find them to be quite firm (of course it depends on how long you dehydrate I guess). I think it would work well for a strawberry shortcake base. Sounds YUMMY

I'm so glad this recipe is getting around. If you try lining the muffin tins with it, please let us know how it turns out. That's a great idea!

Help!
I know I've made these before but as I'm making them today, it occurred to me that '1 date' doesn't sound like much. Should it read '1 cup dates'?
Hopefully someone reads this soon as the batter is in the FP as I'm writing this...

hey Carm...you are reading it right...1 date in the pancakes and 2 in the cream.
I just bought a tin of parnoosh honey dates today so I'm going to try these as soon as i get out of my cracker spree...we have the Spicy herb crackers from RFRW drying now, tomorrow is the Almond flax crackers from the complete book of raw food and the next day is the veggie crackers form the same book...I need some flax I think lol.

I think I might have used a whole cup the first time I made them as they were quite sweet! lol
This time I opted for just the one! Phfew!
Sounds like you're turning into the Cracker lady...  We hadn't made them for quite a while but are entering a 'spread and cracker' phase. Perfect no-brainer food for the summer. Can you keep us posted on your cracker experiments?

I had brought a sample to my friend who has a raw deli last time I visited. She told me yesterday how much she enjoyed them so I printed it out for her.
And this wonderful recipe keeps being passed on...
