Avocado Chutney by Alissa Cohen
An amazing medley of flavors to tantalize the taste buds!
1 large avocado, diced
1 cup whole corn kernels
1 small onion, finely chopped
1 red bell pepper, diced
1/4 cup olive oil
4 cloves garlic, minced
1 lime, juiced
2 teaspoons cumin
2 teaspoons chopped oregano
1 teaspoon chili powder
1 tablespoon cilantro, diced
sea salt and pepper to taste
1. Combine the avocado, corn, pepper, and onion in a medium sized bowl.
2. In another bowl: combine the olive oil, lime juice, cumin, garlic, chili, oregano, and cilantro.
3. Mix the second combination of oils and spices into the avocado mixture.
Enjoy! This is one of my favorite recipes from her book. I love eating it with flax seed crackers. Here are a couple pictures of it:
