Corn Cakes

Corn Cakes

(Makes about 10 corn cakes)

2 cups fresh corn, cut off the cob
1 jalapeņo, minced
1/4 cup red bell pepper
1/2 cup cashews
1 small shallot, minced
1 clove of garlic, minced
sea salt and pepper to taste

Add all the ingredients to the vita-mix and pulse until the corn and cashews have broken down, but leave a little texture. Pour about 2 tbs. of the mixture into the 4-inch ring molds and dehydrate for 6-8 hours (flipped after 3-4 hours) at 105F. Alternate with ripe heirloom tomatoes (salt, pepper, olive oil) and drizzle with the (extremely neon green basil and pine nut mayonnaise.

Carmella! You have to try the corn cakes! I whipped it up and put it in my dehydrator this morning. The house smelled wonderful. I tried to sleep this afternoon and managed 3 hours of sleep, then my husband came home for an hour before he had to go back to work until 9 tonight. So I tried to go back to bed for alittle while longer. It was impossible! (I work the night shift and tonight is my night off.) The aroma of the corn cakes made it hard to sleep. So I got up and tried one corn cake. (Just as a taste test.) It was perfect, warm and just right for mouth feel. Heavenly!!

So I ended up eating three! They are sooooo yummmmy! My Pomeranian was begging for samples, she loves them too! I now have a favorite dehydrator recipe.

I didn't have a jalopeneo (misspelled badly, I know) You know what I mean, but I did have fresh salas, so I added that, plus I made sure there were lots of corn in the mix, not ground up for more corn flavor. It worked very well. I never follow recipes exactly anyway.

Anyway, I have gone on long enough, try them, I think you will like them!

These look delicious! I cannot find the recipe for the mayo, can you direct me to it please?

I'm thinking that perhaps tofu hasn't posted it on his site. There's a few mayo recipes floating around this site, though,t hat might do the trick. Here you go...
