Joz sent me a photo of the fajitas she served at a recent potluck and has kindly agreed to share the recipe with you all.
Fajitas

2 portabella mushrooms, sliced
1 red, yellow, and green bell pepper sliced
2 cloves garlic crushed
1 Walla Walla sweet onion sliced
1 Zucchini sliced thin
1/4 cup Nama Shoyu
1/4 cup of olive oil
2 tbsp. of chili powder
1 tsp. of cumin powder
1/4 tsp. of cayenne powder
Combine ingredients together in bowl and marinate 2-4 hrs. Drain in a colander. Serve
Carmella: Beutiful picture huh? We served the Fajitas on soft Corn Tortillas (RFRW); Sour Cream (RFRW) chopped cilantro chopped green onions and a dab of salsa out of habit of eating Mexican Foods. This trully was 'tasty' out of this world.

I made these the other day and they are truly awesome!!! No wonder you keep bringing them to your potlucks, Jozzie! I served them on soft veggie wraps, with a nice dollop of sour cream and fresh cilantro. Yummo!
They'll definitely be on our summer menu as they're sooooo easy to prepare. Well done, Jozzie you!
Wow. These are so delicious. The perfect lunch to take to work too. I just chopped up the veggies in the morning, and made the sauce, and when I knew I would want to eat in a few hours I just combined everything and viola, a few hours later I had yummy fajitas in red cabbage leaves. I'll probably make these multiple times a week- thank you!!!
this is perfect for take along! Place veggies in ziploc baggie and taco/tortillas and little un- sour cream and an avocado-slice when ready and layer and eat !!!
MMMMM these were good and so easy! I made some modifications: I just used some salt instead of any kind of soy sauce and used onion and garlic powder instead of fresh. I also put lemon and lime juice and some ACV in for more moisture. Used a ton of different veggies plus avocado.
My friend told me this weekend that she added some lemon to the Fajitas and they were just delicious............hmmmmmmm...... thanks, I'll have to try it and edit my recipe? if it's for better? why not.

Yummy! Loved it, but not my hubby. I used a regular onion though, and that's what made him complain. I'll have to try again with sweet onions when I can find them!

These are super! I made them tonight and added mesquite meal and purple corn powder. Wrapped them in romaine leaves with cilantro "sour cream" on the side. Yum! Thank you all!
This recipe is one of our faves! If you dice instead of slice, add celery and tomatoes, and mix the sour cream right in the sauce/gravy - voila....you get stroganoff!
