Singapore Noodles

This came out delicious. One of my favorite dishes…I know I have lots of them! My hunny loved it…:-)

Ingredients
1 bag Kelp noodles, soak overnight
1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon agave nectar
1 teaspoon Himalayan salt
2 tablespoons Nama Shoyu
1 teaspoon paprika
1 teaspoon white pepper
teaspoon chili flakes
1 teaspoon saffron
2 teaspoons carrot juice
1 tablespoon mild curry
10 snap peas, sliced diagonally into small pieces
1 carrot, julienne
1 cup mung bean sprouts
2 tablespoons green onions
1 cup cilantro, chopped
5 Shitake mushrooms, sliced
1 tablespoon shallots, sliced thinly
cup pineapple, chopped
cup red bell pepper, julienne

Preparation

Marinade:

Combined olive oil, garlic, agave, salt, Nama Shoyu, paprika, white pepper, chili flakes and saffron in a bowl. Mix well with a spoon. Add curry then mix well.

Veggies:

Mix all the rest of the ingredients in a bowl. Add the carrot juice. Mix in the marinade and massage the veggies. Place the veggies in a teflex sheet and dehydrate for 20 mins at 105 degrees just to soften the veggies a bit.

Place drained noodles in a bowl. Take the veggies out of the dehydrator and mix it in the noodles. Mix until well incorporated.

Garnish with chopped green onions and cilantro. Serve with a slice of lemon. Squeeze a little lemon on the noodles and enjoy!

Oregon!

Love Oregon...

Racing season starts for me this month and ends around September. Weekly racing itself are pretty long trips from Feb to Sept. Fall would be nice there!

Thanks for your generous offer and I will definitely let you know when we have plans heading up that way!

I just had this. I had to leave out a few items due to me not having them - paprika, green onions & I used 'normal' curry spice. The recipe asked for mild so I was not sure if those 'alterations' affected the taste. Sad to say it is not to my liking & I really do suspect its the 'strong' curry taste that altered it. However, my lovely other kinda liked it

Now being a Singaporean, it does not quite remind me of any childhood memories plus I have never heard of Singapore Noodles - unless one is referring to Mee Goreng which is simply fried noodles
