Where abouts in Ontario are you? I went to several large stores in our area, including Zehrs, and couldn't find them, though we are out in the sticks . I've looked in Hanover, Listowel and Port Elgin and found nothing (though I did find a dragon fruit in PE! We bought it but were quite disappointed by the lack of flavour . I made it with asian pears but even after squeezing, it ended up too wet. So I have it in the freezer for now, my dehydrator should be here in the next day or so and I'll turn this batch into cookies. It smells DIVINE!!! We're visiting relatives in a more urban are this coming weekend, I'll look for jimicas there and try again

This is exactly how mine looked!

But this one just had me dreaming every day! TODAY; no plans whatsoever to make it, had leftover Jicama. If it did not come out I'd loose 2 cup of almonds ! SO HERE IT IS; WOW WOW WOW; So Lemony and the frosting so creamy !

Cake
1 1/2 c grated Jicama *** if it's too 'juicy' squeeze the liquid out by hands*
1 Granny Smith Apple pealed & ground
2 c. Almonds soaked/dehydrated ground fine
4 T golden flax ground fine
1/4 c agave
1 tsp vanilla
lemon juice and zest of 1 lemon
1/2 c poppy seeds.

Mix all Ingredients and form in any shape you want; I made a 5 1/2 inch round dish lined with saran wrap.

Then top the first layer with Frosting

Then top the 2nd layer/round. Flip out and place on a plate and frost the whole cake (top & sides)


Frosting: ****THIS IS SO LIKE 'Costco' white frosting!

1 c OMEGA NUTRITION coconut oil (it does not smell/taste coconuty) The one I used is just like Crisco !

Beat/Whip this with beaters! from my SAD baking days!

Add 1/4 c agave

Juice of 1/2 lemon IF YOU LIKE MORE LEMON DO juice of 1 and or zest. whip again.

Spread quickly as it starts to melt a little.

Sprinkle Poppy Seeds on sides or designs if you make a different shape.

Top with Lemon zest curls or slices.

Place in Ref for an hour or so. Serve at room temperature!

Joz's Notes: You can also juice the jicama using the blank plate to make sure Jicama is a dry pulp. Then add the grated apple and add 2 T of the jicama juice back after adding almond meal and ground flax if the batter feels too dry.

I am working at making your famous cake, is there any updates or changes from the orginal recipe? I don't have OMEGA NUTRITION coconut oil. Can't wait I am so excited, Processing.....

Yeah.... no there are no changes.... the cake is delicious...

the OMEGA NUTRITION coconut oil (it does not smell/taste coconuty) so you can use regular coconut oil except it will smell taste coconuty....

Serve the cake @ room temperature so the frosting is not 'hard'

Have you ever thought you have an ingredient only to find out you do NOT! I don't have the Psyllium Seed Husk I have Psyllium Seed Powder do you think I can just use 1 T or 1/2 teas? I forgot what the ratio was from husk & powder RATS!

Linda: I do not use Psyllium in my recipe.... I made this like 10 times.....

Anna added Psyllium only because her Jicama was too liquidy....and that was her modification that she posted/printed in Purely Delicious Magazine...

Just make sure you squeeze excess liquid from the grated Jicama...

Hint for almond use

Instead of just "using almonds" I save my ground almonds after making almond milk, dehydrate them then run them through a blender or coffee grinder and use the almond flour in my cakes and other concoctions. Even if I'm baking I'll use half to a quarter almond flour substituted for regular flour to give things a richer flavor and higher protein content. New to the community so maybe everyone already knows this one.
