This is inspired by my longing to try Carmella's Strawberry Shortcake recipe. Trying to patiently await strawberry season. So as a second, my freezer is full of blueberries I hand picked last year...and the flavor is out of this world. Thus I decided to do a
blueberry layer with the rest of the strawberry shortcake recipe of Carmella's. The
blueberry layer is modified from Carmella's chocolate and orange cake. This recipe is based on Carmella's, I can't take the credit. I just mix and mashed it

~Blueberries and Whipped Cream cake~
Crust:
3/4 cup mejool dates
1 TBSP lemon juice
1 TBSP vanilla
pinch of salt
1 1/2 cup ground almonds (I soaked and dehydrated mine till crunchy before turning into flour)
1/2 cup dried coconut flakes
1/2 cup cashews
FP nuts into flour then process in rest on ingredients, set aside, then FP dates into date paste, and mix in all the above.
Whipping Cream: (I doubled Carmella's recipe to have 2 layers)
2 cups cashews
2 cups fresh coconut milk ( blend 1 part dried coconut with 3 parts water)
1/2 cup agave nectar
2 TBSP lemon juice
2 TBSP vanilla
pinch of sea salt
1 cup of melted coconut butter/oil
2 TBSP lecithin granules (ground up into powder)
Blend all ingredients togethers except, coconut butter and lecithin...add these last to the blender.
Blueberry layer:
1 1/4 cups of frozen blueberries
1 1/4 cups soaked cashews
1/4 cup agave
2 TBSP. vanilla
1/4 melted coconut oil
1 TBSP. + 1 Tsp. lecithin granules (ground up into powder)
Blend all ingredients together except, coconut butter and lecithin...add these last to the blender.
TO ASSEMBLE:
1.) Press crust into the bottom of a springform pan.
2.) Pour half of the whipped cream mixture on top of crust mixture in springform pan. Then place in freezer for 1 hour to harden.
3.) Then pour
blueberry mixture on top of firmed whipped cream mixture. Place back in freezer to harden.
4.) Pour final whipped cream mixture on top of firmed
blueberry mixture. Place in freezer or fridge to firm.
5.) Decorate with shredded coconut and blueberries on top!
