Sunflower Garlic Spread

I know this doesn't look like much but boy, is it ever yummy! I'm totally hooked on that stuff!

Sunflower Garlic Spread

So simple yet utterly delicious!

2 cups sunflower seeds, soaked overnight
2 garlic cloves
2 tbs lemon juice (or to taste)
Salt, tamari or Nama Shoyu, to taste
Handful dill (optional)

Place all ingredients in food processor and process until smooth.

This sounds yummy and I'm going to use this spread in my "first attempt" at nori rolls tonight. Wish me luck. I'm also going to make some rolls using parsnip rice instead of the spread.

07/20/2009 ....Well I made the spread but found I don't like it. I've had this problem with other nut spreads, where they taste bitter to me. Any suggestions as to what ingredient could be added that would give a smoother taste to my palate? Or was it because I only soaked the seeds for 4 or 5 hours? The nori rolls turned out great though.

Do you think this recipe would make a nice dip for cut veggies for SAD eaters? I'm looking for a few (inexpensive) dips.
