I may have just made the perfect chocolate bar...
chocolate bar/chocolate chip or chunk (depending on how small you break it)
as soon as I let it cool enough to see if it hardens the way I want it to I'll repost with the recipe, but omg it is so good!
not too dark-chocolatey, I think this is the closest I've ever come to raw milk chocolate, sweet enough, smooth...
oooh cross your fingers!

it tastes divine, but it's not as hard as I want it, it's solid not "will shatter into tiny pieces if I drop it" solid, maybe I'm a perfectionist...
the recipe is really simple, and i'm not to sure I was even that creative with it... here you go though...
1/2 C Coconut oil
1/2 C Cacao powder
1/2 C Maple syrup (the more I use this the more I have found that it really compliments chocolate so well!)
1 tsp Vanilla
1/2 C Chopped almonds
blend liquid ingredients until super smooth, you can add more sweetener or more chocolate to suit your tastes, transfer mixture to separate bowl and stir in chopped almonds (feel free to add other goodies...coconut, berries, ect) spread on a plastic wrap lined plate or dish and place in freezer to cool...
i've been digging into mine with a spoon, it's quite good, I have to wait for some more cacao to be delivered to me, but when it gets here I'm going to test my alternative sweetner idea- I think this will allow it to become completely solid... candy bar solid!

Mmmmmm... Sounds delish!
About the hardness, I'm thinking you probably need more coconut oil in there. I just looked at a couple of hard chocolate recipes to compare the ratio. Check these out:
Raw Easter Chocolate
1 cup coconut oil
3/4 cup carob ( I bet raw cacao would be even better)
4 Tbsp agave nectar (or more to taste)
2 tsp vanilla (next time I will use orange, mint would be good too)
This next one uses cacao butter which is more solid at room temp:
Chocolate Candy
1 cup finely ground cocao nibs (in Vitamix)
1/4 cup agave
1/4 cup melted cacao butter
Oh, also, have you heard of Cacao Paste? I know this is the stuff that my friend Chantale uses to make chocolate bars at her raw deli. Have a look here.

I made this and you aren't kidding, erin, this may indeed be 'the perfect chocolate bar'. Heaven in your mouth!
Mine turned out quite hard... just like the 'real thing' if you ask me. I know I intended to use less sweetener but now can't remember whether I did or not.  Ah well... Guess I'll have to make it again! Dang!

your recipe is amazing. I've been eating this chocolate for three days now! even my picky husband digs it, and I've had to swat his hand a few times to leave some for me.

Wow!!!!
I made this chocolate bar. I must say that I'm impressed... this is great!!! I was skeptical, because I all the foods that I've made raw, excluding smoothies, have not turned out right. Most of the time they don't taste good at all. I am so excited!!!! This taste like almond joy to me. Although I didn't really care for almond joy, I'm satisfied with this. I 've been trying to add more raw foods in my eating.. it's been hard because I misss the way that cooked foods taste. That would make me eat cooked food more. But I think that this is a perfect snack. I just had a piece and it was awsome. The piece that I had satisfied me and I didn't feel as if I had to eat the whole thing like I did with regular candy bars. THANKS for sharing the recipie. This insipired me. I am making some raw ice cream and some cheez-itz today. Did I say that I was excited ?  sorry this was so long but I am SO HAPPY!!!
