Cream of Tomato Soup

This weekend I was playing with this soup recipe. I had made it before using avocado as the "creamy" component but was not thrilled with the color and slightly guacamole taste so I improvised and it was soo good! As with most recipes, the amounts are very loose estimates and can be adjusted.

Serves 2

5 plum tomatoes
1/2 cup soaked sun dried tomatoes
1/2 cup soaked macadamia nuts
1 clove of garlic
handful of cilantro
handful of basil
salt and pepper to taste

Make macademia nut milk by blending soaked nuts in 1-1.5 cups of water and straining. Then add the tomatoes (fresh and dried) and garlic and blend. Next add the herbs and pulse. You could blend it all together but I prefer to see red tomato soup with flecks of green instead of pea green soup.

I thought it came out great. I served it in warm bowls. Enjoy!

This sounds goooooooooooooood! As I did not really care for the avocado in Tomato Soup as much as I love avocados, and tomato and avocado are delish in other ways but for me not in a soup! why? so I stopped making it.

Will have to give this a try !

I LOVE soups and this one sounds awesome. I even have plum tomatoes in the cupboards! Yay! Will be making this tonite.

Let me know what you all think. I am sort of new to all of this having only started going raw last August and 20 lbs down and for the most part stays off - it fluctuates a little when my cooked food addiction takes over for short periods. :-)

Carmella, I actually happened onto your blog this weekend (searching chocolate sauce, YUMMY) and through that discovered this community. Thanks for the welcome on my very first post.

This soup was sooooo good!

I used 1/4 cup macs, dry instead of 1/2 soaked and didn't bother straining the milk. I also used regular tomatoes since I had some that needed using. I added a touch of sweetener at the end to balance the acidity level.

Oh, I served the soup topped with fennel seeds and seaweed ground up.

Yummo!

aww, the picture looks so good and it looks so smooth. I really need to get my Vitamix! I just can't get the right texture on anything.

Today I realized after I started that I had run out of sundried tomatoes so I threw in a zucchini and added a dash of cumin and topped it with a drizzle of hemp oil and course salt. It came out really good too. My friend, who is not raw, wanted to try some and loved it. I'm really liking the mac milk as the creamy part, the taste is easier to disguise than avocado.
