Thai Vege Soup

I made up this recipe for dinner, very good! Also very filling!


Thai Vege Soup

1 Orange Pepper
½ Tbs. Sea Salt
3 Carrots
¾ Cup Cashews
4 Radishes
2 Cups warm water
1 Tbs. Curry Powder
¾ Cup Almond Milk
1 Tbs. Nama shoyu
1 Tbs. Agave
½ Tbs. Jalapeno pepper
1/8 cup green onions

Add everything to a Vita Mix Blender and Blend until blended.

Yum! This looks great! I don't have any radishes but do you think daikon would work?

Carmella,
I'm sure it would! I had just made a salad for the week and had radishes left! That's how I started the soup with my left over salad stuff.

OK, made this for dinner and it was sooooooo good!

I didn't have cashews so used part young coconut and macadamias. I also replaced the jalapeno with cayenne and topped the soup with fresh chives and cilantro. Yummy!
