I've 2 big ripe pineapples sitting here. Does anyone have good recipes using them? I'd like a nut free smoothie recipe and then anything else you can think of
I love pineapple and I hesitate to call this a recipe because it's too simple but I put the pineapple in the blender (after it's peeled), add a little bit of water, a squirt of agave nectar and some vanilla.
It's so good I almost hate to change the flavor by adding anything else. I am looking forward to others ideas though.
thats a great idea elaine, and it doesn't compromise the pineapple too much, like you were saying. I agree, I love pineapple by itself so much that it's a rare thing for me to use in a recipe, but this time I figured I'd see what else I can do since I have so much of it to use up.
I put many times pineapple in my green smoothies. Usually with kale or romaine, but not too much of the greens!
One thing you shouldn't make with pineapple is a cake. I tried it and it was so bland... I couldn't even taste the pineapple in it. A waste of a wonderful fruit...
I'm with you girls about how delicate the flavor is. I much prefer to enjoy pineapple on its own. I've made this pina colada before and it was yummers, though! You might want to give it a try!
Well, im here to report back that I did have some pineapple on its own today, AND in a green smoothie - pineapple, spinach, chard, water, lemon, bit of mango. it was pretty good!
I met Tonya Zavasta last night and she served her famous green pudding. Fairy girl, it had some of the same ingredients as your smoothie but was thick.
She used swiss chard, mango and pineapple!!! It was great!!!!

Actually, I just started reading her book, Quantum Eating that I won from the RFC draw...and now I definately want to get her other books - I really didn't know anything about her before this.

we use the meat from an entire pineapple, the water and meat from a young coconut, the juice of a lime, a bit of agave, and a pinch of salt. blend until smooth and freeze in popsicle trays. add a stick when they are half frozen.
I actually saw this recipe in a regular magazine by Ellie Krieger. She used it to put on chicken but I thought it might be a good salsa for flax crackers:
for the dressing:
1 tbs. of honey (I think you could use raw honey or agave nectar instead)
1 tbs. of fresh lime juice
combine the following and then pour the dressing on it and toss and combine.
1 cup finely diced pineapple
1/3 cup seeded and finely diced English Cucumber
1 bs. chopped fresh mint
I am fasting right now but I can't wait to try it when I get off my fast.

Here's what I do with pineapples:
1. Twist the crown off or bend it in all directions until it breaks off.
2. Cut it in half lengthwise.
3. Cut each half in thirds lengthwise, making six sectors (nominally 60°, but actually anywhere from 45° to 72°).
4. Peel the rind off. The remainder includes the core and is about half the weight after removing the crown.
5. Cut each sector in half and freeze them.
6. Put the six rind sectors in a bowl in the fridge to gnaw on later.
When I want a pineapple smoothie, I take some (usually two) chunks and throw them in the blender with the other fruits.
Fairygirl, I posted a thread 'Tonya Zavasta' , I should of started it 'I MET Tonya Zavasta'...
...she was awesome...absolutely incredible and the picture on her books doesn't do her justice....her skin is like porcelain and she shines so bright and her energy filled the room. I've heard a few lectures/authors and she really has what I want. She's so tiny yet so powerful and at the same time very gentle. She's 11 years raw and explains the process and it can't be done overnight.

There were 50 people in the room and she ended up with 50 followers. I was so impressed with her and she's given me that boost I needed to leave some negative ways behind.
