we definitely make the same one almost ALL the time, i've tried a few new ones lately which are great too, but this is my standby (amounts are ?? guesstimated...)
1c sesame seeds (could be soaked/sprouted) (or use about 1/2c tahini, or ground seeds if you don't have a vitamix..)
1 lemon, juiced
1 - 4 T tamari (or less miso)
*garlic or ginger, optional (i think the original recipe called for garlic, but i haven't used it in years, i just started adding a bit of ginger and it's good)
*bit of honey or maple syrup, optional
*salt, optional depending how much tamari/miso you might use...
water to obtain your desired consistency.
if you don't soak/sprout the seeds, the dressing will thicken upon sitting (unless you use tahini)
mmmm, realizing that the amounts are really vague. i really just throw stuff in there. it is super simple, but delicious. you can add a dash of sesame oil, handful of parsley or cilantro, bit of zest, spices?...i use this on everything from salad to "steamed" veggies

and grain...make thicker for a dip - guess it's pretty much like hummus...
