thanks guys -- we've been trying to think of a phyllo-like wrapper for spanakopita for a while, and finally hit upon the cauliflower after seeing it at our co-op...

the vegetable choices available at this time of year sort of forces the creativity out of you

(next time, beets)

Joz, thanks for the kind words and encouragement. Lately I've really been drawn to making and experimenting with raw food. It's so much fun! I'm still a bit of a newbie. You'd laugh if you saw me in my kitchen trying to peel and chop ginger or trying to cut carrots into matchsticks. I'm slow and so not like a pro But I'm slowly improving ......

And thank you soooo much for sending those recipes Joz!!!!

Hi RawDiva,

Thanks! I used an 8 inch springform pan for the choc maca cake and a 9 inch pie plate for the coconut cream pie

Hi Vegdiane - the coconut pie is excellent. I'm a coconut lover and the young coconut milk, meat, dates and coconut butter taste just lovely together. The first time I made it, I used the coconut crust in the recipe but found it to be very crumbly. Carmella suggested using more agave to keep it together. However, the second time I made it (for our dinner party), I made a variation of Ani Phyo's crust on her 'Real Cheezecake'. Something like this: 2+ cups of macs, 3/4 C of packed dates, 1/4-1/2 cup of grated dry coconut and a maybe some vanilla. (should have written it down!) And my crust came out just fine. The color wasn't as nice as the coconut crust being dark but I think it was still an excellent dessert to serve to our friends. They loved it too!

I would definitely recommend making it

Sure! I just got a Vita-Mix a month or so ago, and have been blending things left and right... Here is the recipe (I don't even like celery, and I loved this soup!):

Raw Fresh Thyme and Celery Soup (serves 1-2)

1 bunch celery, stem ends removed and roughly chopped
2 sunburst/pattypan squash, roughly chopped (or other summer squash)
1 clove garlic
2 green onions, stem ends removed and roughly chopped
1/4-1/3 c roughly chopped poblano pepper (or some of a hot chili pepper)
1/2 avocado, peeled and pitted
1 tbsp fresh thyme leaves
1 1/2 c water (or enough for desired consistency)
fresh thyme sprigs and raw sunflower seeds to garnish (optional)

Place all ingredients except garnishes in Vita-Mix or high speed blender and process 1-2 minutes until smooth. Pour into soup bowls and garnish with thyme and sunflower seeds.

Thank you!!! I can tell it's gonna be delicious as the ingredients called for remind me of one of my absolute favorite soups: Cream of Zucchini.

Oh, and I took the liberty to post the recipe in the soup section as well.

As the dish was a work-in-progress, there wasn't a recipe posted.

We liked that one, so we need to make it again and get the recipe together...
