Coconut Curry Soup
My first raw creation! I'm in a crazy coconut phase. So this is what I came up with tonight. It was smooth, creamy and tasty!
Ingredients:
1 cup coconut milk
1/4 cup fresh orange juice (half an orange)
1 small clove garlic (the tiny one in the center of the bulb)
1 date
1 tsp curry (mild)
1 tsp nama shoyu
2 tbsp fresh basil
minced fresh ginger (to taste)
pinch of salt
---
Topping:
1/2 cup diced tomatoes
1/2 cup diced mushrooms (baby bellas)
few flakes red pepper
Blend all ingredients together (except the topping). Add topping. Voilà! Let sit for a while so the tomatoes and mushrooms take on some of the soup's taste.

Mmm, sounds delicious! I'm also a big coconut fan, especially of the coconut & curry combination.

I thought of taking a picture, but... well, it got eaten before I could find the camera! Sorry! Next time I make it I'll try to remember (I'm a adventurer of the food kind -- rarely make the same recipe twice!--). Or if you try it and take a picture, feel free to put it on here.

WOW!!!!!!!!!!!! This soup is SO AMAZING!!!
Due to time constraints I used canned coconut milk, since I can't eat dates I used 1/2 tsp agave, for the ginger I measured out 1 tsp, and I was nervous about the curry so I used less - but next time I make it, I'm using the whole teaspoon!!!
Also, I took a picture, and as soon as I can figure out how to post it I will (gotta download it first, I'm still eating my soup!)
Oh, and since I had lots of green onions, I put some of that on as well. Chives would be great too - I'm always looking for some way to use my big pot of chives!
Even without the toppings, this soup is spectacular.

Today is the coldest one we've had so far (1 degree! Brrrrr  ) so it sounds like this soup will do the trick to warm us up. Thanks for bumping, Rowan!
Oh, just a quick question, how many servings would you say that makes?

I would say it serves 1.
Oh, and I like measuring everything so I did:
1 tsp garlic
1 tsp ginger
I also didn't add extra salt as I figured the Nama Shoyu was salty enough, and I didn't use red pepper flakes as I don't have any. Next time, I'll leave out the mushrooms, though. It was OK, but I really prefered the tomatoes and green onions.
I'll edit this post in a bit when I get my picture downloaded & etc. - I'll plonk it right in this post. Might be a while though, I'm having techncial difficulties with my camera.
All righty, let's see if I can get the picture in here!

Carmi !!!!!! It's still warm here; got all my windows open! no heat, don't like heat; eek! and I posted in the corn chowder section I'm getting my last batch of tomatoes !!! they'r still hanging on the vines !!! going gone gonnnne into the corn gazpacho again!!!!

I can't even fathom 1 degree. I am such a baby, I whine when it's high 50s. Of course I whine when its in the 100s also. I have a small window of comfort.
Love curry and coconut milk. I think I need head to the Indian market and pick up some curry paste.
