Cream of Cucumber Soup
I looked up the threads with Jennifer Cornbleet's recipes, and I don't think anyone posted this one. I love it, it makes 2 servings, but I drink the whole soup because it's so good. It says to blend in steps, but I add everything to the vita-mix and blend once until smooth. Next time, I'll try to resist eating it right away to take a picture
Cream of Cucumber Soup (by Jennifer Cornbleet)
4 romaine lettuce leaves, chopped (about 1.5 cups) (I use tightly packed cups)
1 cucumber, peeled, seeded, and chopped (about 1 cup)
1/2 cup water
1 T lemon juice
1/2 t crushed garlic (1 clove)
1/4 t salt
1/2 ripe avocado, chopped
1 T extra virgin olive oil
1 T minced fresh herbs, or 1 t dried (I use parsley)
Place the lettuce, cucumber, water, lemon juice, garlic, and salt in a blender and process until smooth. Add the avocado and EVOO and blend again until smooth. Add the herbs and blend briefly to mix. Serve immediately. For a chilled soup, refrigerate for 2 hours before servings.

We made this for dinner and really enjoyed it. The texture is perfect; so smooth. It was a tad to lemony for our taste buds, though, so next time we'll just hold back a little.

Speaking of shortcake, I just found out today that Heathy hasn't tried it yet  so I'll be making it for her birthday when she comes in 2 weeks. (Yippee!)

I am so glad I found this, I used to love SAD cool cuc soup, you remember, lots of sour cream??? I have some awesome fresh cucs, avos and cilantro (thought that would be a good addition) YUM, can't wait for lunchtime!

I make this all the time when my husband wants cooked food I don't like! I double the recipe, put everything in a large mason jar, and drink it all as he rolls his eyes
(he loves green smoothies though)

Holy moly, this is delicious! I've tried a few other raw soups that were fairly good (all a bit bitter) and this one is perfect. I halved the recipe to try it out and I'll definitely be making more shortly. Yum yum! Thanks for the recipe.

I do get the bitterness in other soups too, it's really weird. Like the cream of zucchini soup, I find it so bitter. This one though is delicious!

Sounds great and am anxious to try, but will probably wait for cukes to be in season, so am copying it.
She probably says to add the fat last - the EVOO and the avocado because it's always best to not whip fats up too much. Too damaging to them.
My thoughts, and thanks for sharing.
