Cheddar Cheeze Spread or Dip

While Heathy was visiting, we came upon the 'Vibrant Living’ book by James Levin & Natalie Cederquist on the shelves of Ashinah's community kitchen. It was published some 15 years ago which makes it one of the pioneers in terms of raw recipe books. Heathy pointed out that their Cheezy Cashew Sauce just ought to be the recipe that inspired the Rich Cheddar Sauce we all love as it is strikingly similar.

For fun, I started out with the Vibrant Living recipe, then added the bell pepper and tahini a la Cheddar Sauce. While the result was just as delicious, it was also slightly different because of the amount of seasonings and the addition of the oats as thickener. A new favorite in our house!

Cheddar Cheeze Spread or Dip
Adapted from 'Vibrant Living’ by James Levin & Natalie Cederquist

1 cup red or orange bell pepper
3/4 cup cashews and/or almonds, soaked
1/2 cup water
2 - 3 tbs rolled oats
2 tbs nutritional yeast
2 tbs lemon juice
2 tbs tahini
2 tsp onion powder
1 tsp garlic powder
1 tsp salt

Blend all ingredients until smooth. Add more water or oats until desired consistency is reached.

Enjoy on your favorite crackers/breads, zucchini pasta, pizza or with veggie sticks!

Ahhhhhhhhhhhhhh; I'm collecting 'cheese' recipes to do a Fondue ! I got two pots; and 'heat' it up just ever so gently and serve with all kinds of veggies and Onion Bread chunks for dipping!

I went and looked at my Fondue Pots; Not in October though; Don't have any more free days as I have a few 'private' birthdays and functions!!besides all my Raw Adventures!

So November 13tj !!!! Fondue is on the Calendar !!!!!!!!! (before I fill it with other things/appointments!)

and follow this with a un Egg Nog???? whousssssssssshers ! I can't wait for October to be done with! LOL ! Well maybe not! Tea in Tea House is my EXCITEMENT I'M TOTALLY LOOKING FORWARD TO !!!! So I'll wait!

I just made Cheezy Toasts by spreading this on jicama slices and dehydrating.

Oh, and I should mention that we have to whip up this spread often as its Mosaica's fave.

ooo- fondue pots. such a cupboard clutterer! what temp does a fondue pot get to with some candles under it, anyways? this may be the best way to warm up some chili or sauciness...!!!
