I just went out yesterday and bought the ingredients for the Stuffing Fantasy. I want to make Jicama mashers and Ani's butternut cranberry rice to go along with it.
I have those persimmons. They may turn into a pie. I'm debating on whether I want to share any of my stuff with the SADers.
Technically, the Canadian Thanksgiving was last month, but I might just use the excuse to play with Holiday flavors. My menu would be very similar to yours actually, except for the addition of some mushroom gravy. I'm thinking I'd like to try a pumpkin pie too, either the one Heathy recently made or the one in Everyday Raw.
No other word! the stuffing fantasy for sure for sure!
***for the stuffing; spread the whole mixture on teflex sheet. Dehydrate several hours and fluff! Dehydrate for another hour or so and fluff again. This is some moist and some dehydrated texture! We served it on the 'turkey' platter **I got one @ T J Max! serve just like 'stuffing' WOW!
orange cranberry relish
Heathy's pumpking pie and
Parsimon Pumpking Pie ***getting some parsimons tomorrow!
the 'famous' mashers
gravy

BTW, Fred Patenaude just sent his readers a free Thanksgiving menu sample. Still have to browse through it to see if anything sounds interesting...[/QUOTE]

Hate to break it to you Joz, but it looks to me like you've got yourself a rooster platter (ahem, a cock platter if you please) instead of a turkey. Trust me, I've spent lots of time with each of these animals (for reals), and turkeys are much uglier than that guy on your plate.
Regardless, I love the way you plated the stuffing so it looks like a big ol' pile of veggie stuffing with a bird head!
Roooooooooooooooster! hahaha I did not even think of 'him' and yup it's not a 'turkey' but it was fun and everyone enjoyed this and no one paid attention to Roooooooooster !!!!!!! oh well the 'stuffing'' was delicious! hehehe!
Stuffing Fantasy ***hehe I saw another plate so I grabbed it! rooster?turkey! what the heck! it looked good!

Just had my 4th Thanksgiving Meal! Wayne's daughter & hubby like like all the RAW fixins ! I made them a Worthington vegetarian 'turkey' casserole and everything else is 'extra' from last night and RAW! Wants to know 'how' I made the stuffing and the Yam casserole !
hehehe and the 'beat' goes on tadadada the beat goes on ! Till next year!
I made 1/2 batch of Matthew Kenneys jicama ones; and with all the other foods I did not get to savor it ;;;; but they were good enough so I'm making a batch to enjoy with less food to compete with!
I mocked up analogs of mashed potatoes, stuffing and cranberry relish. The cranberries were delicious - gingery and fruity. The taters and stuffing, though, I probably could have done without. They tasted good, but were very heavy and full of nuts. I could only eat a small portion of each, along with other veggies.
Next holiday I think I'll just make something special and beautiful and raw, even if it doesn't snap into the mold of traditional holiday foods. Making analogs of Thanksgiving favorites was a fun experiment and definitely amused and impressed my non-raw friends. But I think I'd rather put my time and energy into creating a beautiful and delicious dish that showcases the natural flavors and textures of the food I'm using, instead of trying to make them into something that they are not.
On the other hand, the pecan pie I made was delicious and satisfying. It was also very filling, so only a small piece was necessary to do the job (and now I happily have half the pie stashed in my freezer for future enjoyment). I served it with homemade raw coconut-vanilla nice cream.
