Yuletide (Christmas) Log

Hello, I made this as a raw version of the classic yuletide log. I hope you enjoy it and happy holidays!

SPONGE CAKE
2 apples, quartered
1 banana
2 cups buckwheat sprouts
1 tablespoon cacao powder
1 teaspoon cinnamon powder
1 tablespoon mesquite meal or carob
pinch sea salt
4 drops orange oil or 1 orange zest grated
(1/4 cup water if required)

Process all the ingredients into a smooth thick batter, addinga little water if needed to turn the mixture. Spread out onto a teflex sheet into a large square about 1cm thick. I deydrated mine at 145 for 2 hours, flipped the cake over and peeled back the teflex sheet and then turned down heat to 115 and dried for another two hours. Once the cake resembles a soft cooked sponge, it's ready.

JAM FILLING
1 cup apricots, dried
1/2 cup dates
pinch sea salt

Soak the apricots and dates in warm water to cover for about 20 minutes to soften them. Blend into a thick puree/jam. Spread onto the square sponge, leaving about an inch all around the edges. Use the teflex sheet the sponge is sitting on to carefully roll up into a log. You can look up google to see how traditional cooked versions are rolled up if you need further instruction. Try not to break the sponge but it's okay if you have a few cracks. You can leave this overnight in the fridge until you're ready to do the butter icing.

CHOCOLATE BUTTER ICING
1/2 cup cacao butter
1 tablespoon lucuma
1 tablespoon cacao powder
1/2 vanilla pod
2 tsp agave
2 teaspoons lemon juice
2 bananas
pinch sea salt
(1/4 cup water if needed)

Melt the cacao butter in a saucepan over a low heat. Put the chopped bananas into the blender and add all the other ingredients. Blend until you have a thick cream, only adding enough water to turn the mixture if required.

SNOW
2 cups coconut chips, ground

Smear the chocolate butter over the log making sure you get it over the sides and edges. Use a fork to create a bark effect along the log. Sieve the coconut over the log for a snow effect. Decorate with artificial holly or berries. You can freeze yuletide log until Christmas if preparing it ahead.

WOW! I spent some time last week looking/searching/ for a recipe! Found several SAD ones and was planning to try to convert them into RAW.

So here: you came up with a recipe for me! Thank You and a Joyous and Merry Chirstmas to you!!!

Thank you Deb and Carol for the music comments. If you scroll down on my christmas blog you'll get one of my players, you can use the arrow keys to change tracks. I wanted to put my christmas song 'I Live In Christmas' on my raw christmas blog. I would have liked it to play automatically but just didn't have time to get into that technically speaking. Too busy making mince pies and logs and the like!

Bree,

Will check out player later. I did hear several "angelic" sounds yesterday. Man do I love them. No bragging, but telling the truth.

So you replaced raw with singing melodies? You have talent in both areas so balance! Thanks for sharing you RAWKIN star. Still singing/traveling?

Hi Carol, thank you for your lovely comments. I love the variety of being able to write music and raw food recipe books. I don't perform live just now so I'm just enjoying writing and recording at home.

I made this today! Tastes ''divine''' however I had difficulty rolling it into roll so each time I rolled it broke and then broke and I ended up with 3 layers. So the 'log' was slightly ''flat'' but but the taste was great.

wyjoz, glad you enjoyed it, keeping the sponge together in the rolling part is such fun and has to be done carefully. It also depends on the sponge being 'baked' just right, still soft but not too dry. Have another go sometime, it was my first attempt too last week and we had the log yesterday for christmas. There is none left, it was really yummy with the contrasting chocolate sponge, jam and chocolate cream on the outside. I will be making it again in the near future I think! Thanks for posting how it went.

Wow I made this recipe about a week ago and loved it. It was not super sweet or rich like all the cheese cakes I was making before that are mostly cashews, so I enjoyed the lighter texture. It still had loads of flavor and the icing was rich, but tempered by the lemon juice, made it really good.
I am thinking next time I might skip the Tablespoon of cacao in the sponge and just make it a vanilla/mesquite flavor as I want to minimize my boys exposure to cacao, it makes my eldest a bit hyper
One other thing is I don't use the teflex sheets, I use parchment paper and because you don't want the sponge completely dry, when I tried to flip it and take the paper off, it stuck, so I lost some cake there, will try oiling it next time.
