Raw Fresh Thyme and Celery Soup

I just got a Vita-Mix a month or so ago, and have been blending things left and right... Here is the recipe (I don't even like celery, and I loved this soup!):

Raw Fresh Thyme and Celery Soup (serves 1-2)

1 bunch celery, stem ends removed and roughly chopped
2 sunburst/pattypan squash, roughly chopped (or other summer squash)
1 clove garlic
2 green onions, stem ends removed and roughly chopped
1/4-1/3 c roughly chopped poblano pepper (or some of a hot chili pepper)
1/2 avocado, peeled and pitted
1 tbsp fresh thyme leaves
1 1/2 c water (or enough for desired consistency)
fresh thyme sprigs and raw sunflower seeds to garnish (optional)

Place all ingredients except garnishes in Vita-Mix or high speed blender and process 1-2 minutes until smooth. Pour into soup bowls and garnish with thyme and sunflower seeds.

I made this soup yesterday with a few mods and it was so creamy, tasty and delicious! YUMMO!

First off, I doubled the recipe so as to serve 5 people. Here's what I used:

5 1/2 cups chopped celery
1 1/2 avo
2 cups zucchini
2 green onions
2 garlic cloves
1 1/2 tbs dried thyme
Water
Pinch cayenne

Thanks nightheron! I'll definitely be making this one again!

Howdy Carmella. Just wanted to say that your countertop looks like mine. Do you have emerald green silestone? We redid our kitchen a year and a half ago and put in very similar looking countertops

Had we not redone our entire house, mostly ourselves for a grueling 7 months, I probably wouldn't notice such details.

Oh, this sounds nice and summery also. I love celery and I love thyme. I'll try this soup when I am out of the pea soup.

Made this tonight. My only mod was I used fresh rosemary instead when I realized I didn't have any fresh thyme. And I didn't add the chili since my mother is allergic to it.

Really nice soup. I'm sure its even better with the chili! I have enough for lunch tomorrow.
