Chia Mustard Dressing

I'm on a chia kick these days. Finding all kinds of ways to include these miracle seeds in our diet. The following recipe is adapted from one I found on a Canadian site, Superseeds Canada.

Chia Mustard Dressing

3/4 cup water
1/4 cup olive oil
2 tbs chia seeds
2 tbs apple cider vinegar
2 tbs lemon juice
1 tbs honey (or agave)
2 garlic cloves
2 tsp dry mustard
1 tsp salt (or to taste)
1 tsp dried dill

Make a chia gel by combining the water and chia seeds. Next add the rest of the ingredients and blend until smooth. Adjust salt to taste.

I know! I thought about calling it that but then decided the honey flavor wasn't pronounced enough. Perhaps you could add more than called for?

Perfect! I just got a sample of chia seeds from an order I placed and have been looking for a new dressing recipe... Law of Attraction in the works! lol

Love Chia. I have even sprinkled them on my ice cream for a crunch. I'll try this dressing.

Just made this today. It was really good. I only had 1 Tbsp chia seeds, but it seemed to work good. I'm guessing it just woulda been a little thicker with the 2 Tbsp, but I was happy with the consistency. I'm not sure if I just ate a larger than usual salad or if it's the chia seeds, but I'm really full. I'll have to experiment with that. My salad was pretty big, but I don't usually feel as full as I do now.

Glad you liked it, ncadotte! I haven't made it in a while but will again soon. I'm thinking that it might be the chia seeds. These little guys do expand quite a bit. I always feel super full after just a small bowl of chia pudding.

Bluebells,

If you do a search online, you can find a lot of places that are cheap to order from. I got a huge 2 lb bag for like £7.00 with about £3.00 postage and packing. I can't remember the name of the vendor....

LOVE chia here too, but can't stomach dill... Do you think it would be missing some umph without the dill?
