Finally, there's the 'Jica-Rice Fresh' in Carol Alt's new book, "The Raw 50".
I just processed jicama in the FP until rice like. Then added chopped red onion, red and yellow pepper, cherry tomatoes, garlic, black pepper, olive oil, cumin and salt. Yum! Yum!
