Having some technical difficulties.
For a really terrific cake recipe, just click on my blog for photos and all the juicy details (my copy and paste function is not working!!! hopefully I can do this at home over the weekend)
Here’s my recipe:
Use an 8 inch spring form pan
Crumble bottom and & topping
* 2 cups of pecans, not soaked
* 1 cup of dates, not soaked
* 1/2 teaspoon of sea salt or a bit less
Use a food processor with the S blade to process the pecans and sea salt until broken down into a very rough flour. Then add the dates and process until the mixture becomes crumbly. Don’t over process it.
“Grease” the pan lightly with coconut oil. Then add about 50 to 60% of the crumble mixture into the bottom of the pan. Set aside while you make the cake.
Cake
* 1 cup of young Thai coconut meat (I had mostly firm meat)
* 1 cup of unsoaked cashew pieces
* 1/2 cup of strawberries, chopped into small pieces
* 1/2 cup of thick coconut milk (blend meat and water from one small young Thai coconut with firm meat)
* 6 good sized dates, soaked for 20 minutes
* 1/4 teaspoon of sea salt
* 1 1/2 scraped vanilla beans
* 2 teaspoons of psyllium powder
* 1 tablespoon and 1 1/4 teaspoons of agave syrup
* 1 tablespoon and 1 teaspoon of coconut oil
* 2 cups of strawberries, chopped into small pieces
Use a food processor with the S blade to blend all the above ingredients except for the 2 cups of strawberries. Blend until well combined but not completely pureed. Transfer cake mixture to a big bowl and stir in the 2 cups of strawberries.
Add the cake mixture to the pan. With the crumble left, add about 1/2 of it onto the top of cake and press gently. Cut up a few more strawberries and place on top of crumble. Sprinkle the final bit of crumble on top, still letting the strawberries peak through.
Freeze cake until frozen solid. (about 6 hours or so). Then take cake out of freezer and remove sides of the spring pan. Put cake into the fridge and eat when thawed.
Strawberry sauce
* leftover coconut milk from above
* big handful of fresh strawberries or more
* agave syrup to taste
Blend everything up in the Vitamix until smooth.

I can't say more or give any further hints except this person has been in the raw headlines recently. I'll post and share more w/all plus advantage notice once plans are finalized for Boulder, COLORADO. We believe this will be the CO spot to include Denver, Boulder, Ft. Collins and CO Springs--big towns near by. If enough interest maybe hotel discounts which are all close by. Event will be in Boulder. It's going to be amazing is all I can. Plans are in the works. Hi guys!
I've been offline for a while as Don and I were making the journey from BC, our home of many years, to Quebec where it looks like we'll be staying for a while. Major shift for sure. We're now camping at my sister's and probably will be for most of the summer.
After re-organizing the kitchen a bit (I'm blesses that Josee pretty much gave me the green light  ), I'm slowly getting back into food prep. I served them raw dessert for the first time a few days ago (my Strawberry shortcake) and they were immediately hooked.
I see that you're still pumping out new raw creations, Joyce. Awesome! This one sounds really tempting as we've found some lovely local strawberries at the market. I saw the recipe and pics a couple of days ago but it's vanished now.  I'm thinking maybe you deleted it by mistake?

This cake is so good that I'm making it again this weekend but with blueberries instead
Also hoping to purchase an ice cream maker tomorrow or sometime over the weekend. Really want to make good raw vegan ice creams this summer!!!!  A nice vanilla ice cream would go perfectly with this cake.
My husband really loves the crumble part as well as the cake filling. It's surprising how it doesn't taste like coconuts!

Gotcha! If you still have trouble, just holler; I'll be happy to copy and paste it for you in your initial post.
Do let us know how you like it with blueberries! I'm planning on making the strawberry version this weekend with the last of the young coconut I bought along the way. (I went grocery shopping in the store where Heathy buys her stuff in Ontario.  )
An ice cream maker!?! Ohhhhh, you're gonna love it! It's definitely on my 'to buy' list too.

I may have some extra ice cream makers for sale--new and will verify that. I seemed to have gone overboard like with many other things like pastry presses, so just never know.
I have more than my husband would love to SEE here.
Shoes...don't ask me about all the new kids shoes mainly, few, used, but no junk including same for adults..girls/boys/mens/women. Regardless garage overflowing with JUNK as my husband sees new and old. Got furniture...omg....don't bring this hot subject often to often here.
So ask first. Perhaps we can strike up a deal. Not sure about out of the state.
PS....may be returning another lemon of computer: HP lap this time; new, but super slow....also Dell lemon finally returned after 9 mos...miraculous full credit...just happens to be great at conflict resolution in a kind way and 100%track record. Ok: 24 hour fit, Dell, United...all battles done in love and I won.
Are laps super hard to get used to after desktop which I prefer to be without?
got 4 Gig....HP Pavilion Entertainment have...1 wk. old...almost....many calls in to HP...defrag took tons hrs. with hardly any stuff on machine...opening MS Word, hour glass keeps spinning. Yes, sounds like problems so no growing pains desired here. Another HP thinking.

After hitting 7 different stores, I found the 2 quart Cuissanart ice cream maker in the mall right by my work office! Bed Bath and Beyond ran out and all the other stores had the smaller model. This one has a nice stainless steel body and makes ice cream in 35 minutes automatically. I just put the middle bowl in the freezer overnight. Bummer I can't make ice cream tonight like I had planned. So tomorrow morning I'm going to make vanilla ice cream and the blueberry crumble cake. They will go very well together!!
Way off the subject (which I'm famous for): I made this stellar cole slaw with a lemon dill macadamia mayo today. I normally don't get excited for cole slaw but this is the best slaw I've ever had!!! Recipe is from Sarma's new and amazing book with Pure Food and Wine recipes!!!! OH MY GOSH, I totally recommend this gorgeous work of art!!! I pre-ordered the book (as I'm impatient) so I got mine on Thursday!

I'm saving for that cuisinart too, as it seems pretty good. It's funny, I don't even like ice-cream, but I have a feeling raw ice cream is different

Joyce, you've got a winner with this one!  I made it for my birthday and it was a hit!
My notes:
~ I made a little less crumble mixture since I used my 7" pan.
~ I only had whole cashews so I ground them in the Vitamix before adding them to the food processor.
~ I didn't have quite enough young coconut meat for the cake batter so I replaced the amount missing with cashews which I also ground finely.
~ As my coconut milk was on the thin side, I added 1 tbs of melted coconut butter to the mixture.
~ I used 12 small dates (not Medjhool) and the batter wasn't quite sweet enough to my taste so I added a bit of agave.
~ Perhaps because of my subbing, the piece's tips collapsed a bit once thawed, but the flavor was awesome!
~ Oh, and I had to skip the Sauce altogether for lack of young coconut.
