How do I soften Eggplant for .....
Thinking Eggplant Parmesan.
I peeled, sprinkled salt both sides of eggplant, sliced thinly, covered with paper towel and it is soft now.
Wondering if there is another way to avoid using salt, although I didn't use that much.
Also favorite recipe desired.
Don't want to use dehydrator today, but maybe sun. Need cover food I suppose so birds don't eat or poop.
What's your quickest recipe for using eggplant probably with a cheese on top...I have Mac and cashews. Do I need spinach or other ingredients? Plenty of fresh basil.
Headed to gym and will check back.
