Whipped up a batch of this today....looking forward to the impending week of pesto!
approx 75gm sweet basil leaves
1-1/2 cups brasil nuts
1 cup sunflower seeds
2 cloves of garlic, crushed- reduce if you're not a garlic fiend like me!
1/4 - 1/2 cup extra virgin olive oil
juice of 1 lemon
1/4 tsp sea salt
I broke up the brasils in a mortar and pestle first as i don't have a food processor and was using a cheap and kinda gutless blender! In go the basil leaves, ripped up a bit, then pour over oil, lemon juice, adding the nuts and seeds etc once the other stuff has blended up well. Salt and pepper added towards the end....the verdict: YUM! and very good for controlling any lurking microorganisms due to the pungent purple garlic i used
